Sweet Potato Frittata
with Spinach, Peppers & Feta
This is a great party dish, it slices beautifully and can feed up to 24 as part of a buffet or as seen here in one of our lunch boxes about to go off to a picnic.
Keep refrigerated for up to 3 days. Reheat once only in a pre-heated 180C oven until internal temperature reaches 70C or higher and maintain for 2 minutes.
